1 lb. crab meat (backfin or jumbo lump)
1 Tablespoon flour
1 egg beaten
1/4 cup thick cream
1/8 lb. butter
1/4 teaspoon salt
1/4 teaspoon black pepper
cayenne pepper to taste
Mix crab and flour and stir gently to coat. Add egg, cream and seasonings together. Pour over crab and mix gently. Melt butter in a heavy skillet and drop large spoonfulls of crab mixture into hot butter. Brown on both sides. Makes 8 cakes.
Poor Man’s Crab Cakes (no crab)
2 cups shredded zucchini (unpeeled)
2 cups bread crumbs
1 egg
1 tablespoon mayonnaise
1 teaspoon mustard (optional)
1 Tablespoon Old Bay Seasoning
oil
Mix all ingredients together and shape into patties. Pan fry or deep fry in oil until brown.
